Who said that an entry-level Santorini could not age, such as well as the premium ones? Well, I assure you that…. Is a huge misunderstanding. 

Appearance: The colour is medium lemon.

Nose: The mineral character is noticeable. The fresh fruits have given their place to a more profound and complex bouquet full of lime, angelica plant, flint, brioche and hay.

Palate: It is pretty elegant with admirable lightness despite the high alcohol. It is bone dry with high acidity and medium to full body. The flavours of wet gravel, kerosene, melon and honeysuckle are intense and delicious. The aftertaste is short and mineral.

Drink: It has a couple of years ahead, but there is no reason to wait.

Food Pairing: Fried small fishes or cheese are the perfect pairing.
