Cuvée Evdemon 2016, Estate Argyros

Date Tasted: 10/2020

This wine has not conquered all these competitions by chance. It shows depth and complexity from the first sniff, but the boom comes in the mouth. The concentration is at a level that only great wines of the world have, structure for a seminar and a backbone acidity that hugs all the other elements like a cobweb. Despite the high acid levels, it reveals balance and offers a great ageing potential. I am looking forward to tasting it again in 4 -5 years from now that I believe it will be at its best and 100pts.

The grapes come from two vineyards from selected vines, some of the family's oldest, more than 150 years old. The wine remains in stainless steel tanks with fine lees for 30 months, and 25% matures in big French oak barrels for 12 months. Then it remains again in stainless steel tanks. Biodynamic practices applied according to moon phases, without certification.

Appearance: The colour is medium golden.

Nose: The aromatic profile simply does not exist. The aromas succeed one after the other in fast forward yet with harmony and balance. Honeysuckle, lemon, flint and wet gravel, only to mention some of them.

Palate: It is bone dry with high acidity, full-body, and full complex flavours with a long lemon aftertaste. Just magnificent!

Hold: Drink it now only for the experience; otherwise, open it after 4 years and cellaring it for more than a decade.

Food Pairing: Try it with goat leg in the oven with honey, mustard, herbs and lemon.
