It is a wine with distinctive character, from one of the first crus on Santorini’s island. The paradox is that I bought it from Germany since it is out of stock in the Greece market.

Appearance: Medium gold in colour. 

Nose: Medium aromatic intensity very delicate, needs time and air to open up, lemon zest, flint, and honeysuckle appear all with pure character. 

Palate: There are no actual signs of ageing on the palate. Smoke, white pepper, and saltines are present with intense and insistent. The high acidity balances perfect the full-body with a long aftertaste. 

Drink or Hold: Still fresh and well-developed; it needs time in the cellar.

Food Pairing: It paired just perfectly with shi drum en papillote.
