Mavrotragano 2015, Domaine Sigalas

Paris Sigalas was the first in Santorini who made an effort to vinify Mavrotragano separately and save the variety from obscurity. Since then, all the island's winemakers have added a Mavrotragano in their portfolio, but Mavrotragano Sigalas remains a reference point.

Appearance: Deep ruby colour.

Nose: It has high complexity with many ripe dark fruits, spices, oak notes and minerality. The fruits turn to be jammy, followed by liquorice, vanilla, dried fig, leather, tar, and wet gravel.

Palate: It has distinctive ripe tannins and a solid flavour of overripe dark fruits. It is a full-body wine with a salty and mineral touch. The high acidity managed to balance everything well. The aftertaste is almost long, sweet and complex.

Drink or Hold: It is delicious now but will be better in 5 years. 

Food Pairing: Stew with wild boar will pair perfectly.
