Cava is Spain's answer to Champagne. Although Champagne can be produced only inside the Champagne wine region, Cava can be made in several wine regions in Spain. The grape varieties allowed in Cava are the indigenous Macabeo, Parellada, Xarel-lo, and the international Chardonnay and Pinot Noir. According to the legislation, a Cava sparkling wine must stay at least nine months with the lees, but for Grand Reservas, this period must be 30 months or more. And from the 2020 vintage, Reservas and Grand Reservas must be from organic vineyards with ten years old vines and above.

Appearance: Deep lemon colour.

Nose: Firstly, come up with the intense lemon and floral aromas, and after a while, the glass floods with the scents of autolysis like cheese, bread and brioche. It is fresh yet ripe, complex and elegant.

Palate: It has a fine mousseux with dense tastes of baked apple and flint. The balance is exceptional. It is medium-bodied with high acidity and a delicious, long and complex finish.

Drink: Although it can age and evolve, even more, it's outstanding now.

Food Pairing: Bottarga with mousse tarama on a slice of baked bread.
