This is a modern approach to Xinomavro, the red king of North Greece and the nobler Greek red variety. Only a small part of the wine matured in oak barrels, and the more quantity remains in stainless steel tanks. This process makes the wine fruitier and focuses on the variety's typical aromas. 

Appearance: The colour is medium ruby with garnet hues.

Nose: It is fruit-forward with primary red fruit on tops like strawberry and red cherry layered by tomato leaf and black olives.

Palate: It is round with high acidity and almost high tannins with medium body and medium aftertaste. 

Drink or Hold: The advantage of this wine style and particularly of this wine is that it can be consumed from the bottling yet without missing the potential for a long ageing period. 

Food Pairing: Better prefer dishes with tomato sauce like meatballs, moussaka or even plateau with cold cuts and cheeses.
