Although Xinomavro can be demanding for some palates in its youth, it is an absolute winner when it ages for a certain period. The combination of high acidity, fierce tannins and solid flavours make the wines from Xinomavro the perfect piece for your cellar. If you doubt, taste a 20-year-old bottle and will be astonished by the taste, character and individualism that this great variety offers. And it is still a bargain.

Appearance: Pale garnet colour. 

Nose: It is super complex and has developed a marvellous thick layer of tertiary aromas such as mushrooms, wet leaves, and meaty notes. The olive pate aroma is firm, dressed in ripe tomato and herbs. It is like the Mediterranean is captured in a bottle. 

Palate: It is medium-bodied. The tannins are high and still grippy and robust yet affordable and spicy. It has high acidity and lovely olive, nutmeg, cardamom and toffee layers. The aftertaste is short.

Drink: It is at its best.

Food Pairing: Slow-cooked beef with mushrooms and herbs.
