Savatiano 2015, Aoton Winery

Date Tasted: 12/2020

Sotiris Ginis is the person behind this exceptional winery (read my tribute to Aoton Winery). He is an oenologist and vineyardist with a vision for all the Mesogia area, strong faith in the potential of Savatiano variety, and without any quality discounts (if the vintage is not sufficient, he does not produce wine at all!). So, it deserves every distinction, medal and high rating that rewards his effort.

Appearance: The colour is deep golden with some amber hues.

Nose: It is delicate, ripe and complex with candied fruits, orange peel, quince and mushroom.

Palate: Some extra layers of honey and roasted nuts have high acidity, medium body and long pleasant aftertaste. It is a wine poem.

Drink: It is going through its best tasty and aromatic period so just enjoy it.

Food Pairing: It is suggested for several pairing experiments like Baked chicken and pork brisket in the hull in a sauce of herbs and ginger or some nice fatty fish.
